Partially matched bet in fast moving market

Looking for some advice on how to handle partially matched bets.

Currently, leaving what stake is left in the hope it gets matched, but i would like to be able to take up to a small % below where possible, then leave the rest.

Had a search, but only found one thread on this prior and the person who started resolved the issue a few hours later, so no answer was posted!
